Vegan Mayonnaise of Avocado

Mayonnaise Vegan of Avocado?
Since this site started we have added strict vegetarian and vegetarian recipes, including a strict vegetarian version of our sancocho that has been quite popular.
There is a reason for this: For more than half of my life I have been either vegetarian or strict vegetarian, although now I also eat fish. By the way, although in use, I refuse to use the anglicism / neologism "vegan", and prefer the term "strict vegetarian". If you know the Dominican Republic, you will understand why the term is confusing.

But even if you eat meat there are always advantages to adding vegetable substitutes to your meals.
If you do not know another one, you can already say that you "know" a Dominican woman who does not like mayonnaise. I can tolerate a bad day, but the idea of eating a mountain of cholesterol ruins my appetite. So in search of a healthier option I ended up creating this "mayonnaise" of avocado.

It will surprise you that the flavor is very similar to normal mayonnaise, it is as creamy and full of flavor as mayonnaise, but in return it has less fat, zero cholesterol and the taste that we all know and love about avocado. And in this era, where mayonnaise is a vital part of many of our Christmas dishes, every little bit helps. Try it with your salads, or serve it with the picaderas.
You can see other recipes with avocado on the  Aguacates de México website  or follow them on their Facebook page .
