Domplines



I was already an adult when I tried the Domplines for the first time. These are not part of the traditional cuisine of my region. I am going to dare to guess that the Domplines were brought to the country by successive waves of immigrants from the British Caribbean islands.
If you do not know them, this is the local version of many other similar dishes around the world, such as Italian gnocchi and Austrian spätzle .

For most people the domplines are sachets of flour stuffed with vegetables, meats or cheese, which are then fried, or boiled or steamed. Of the varieties that are probably stuffed, the best known are the Chinese domplines (jiaozi), and the Italian tortellini and ravioli. Almost every country has a variety of domplines that are traditional in their cuisine.
In Latin America, we have, for example, the Puerto Rican domplines , which are fried, and in Chile they have the pantrucas , which are cooked in vegetable soup.
In the British islands of the Caribbean, the domplines are very similar to ours, and our Bollitos de Maiz (another type of popular domplines in the Dominican Republic). In the kitchen of Barbados the domplines are a bit sweet and are cooked in soup, in Jamaica they are also fried.

As you can see, the domplines are almost universal, with countless combinations of ingredients and methods of preparation.

On the recipe of the Dominican Domplines:

Our Domplines are made with wheat flour, and are usually served with a dish with a lot of sauce, such as Salami Guisado , Chicken Stew , Cod Stew , or, more commonly, with sardines in tomato sauce. It is a very humble dish, filling and loaded with carbohydrates. They are almost always served with a little protein of the above mentioned, which helps to continue the day with enough energy when the budget is tight. Nowadays it is a comforting meal for many people, who simply eat them because they like them.
For this recipe I have served them with cod, in which I have replaced the potatoes with Domplines.

Domplines Dominicanos, Recipe and Video: A type of domplín similar to the pasta that is cooked in sauces based on tomato or cheese. Easy and fun to prepare.
Serves : 4 servings

Ingredients
For the cheese sauce
  • 1 1/2 cup cup of cheddar cut into cubes
  • tablespoon butter
  • 1/4 cup of milk
  • 1/2 red bell pepper
  • A pinch of pepper
To make the domplines
  • 1 1/4 teaspoon of salt
  • tablespoons of water at room temperature
  • 1/2 cup of all-purpose flour (plus 3/4 extra cup to add)
  • tablespoons of butter with salt at temp. environment
To boil
  • 1/2 gallon [2 lt] of water
