Coconetes (Rustic Coconut Cookies)
These rustic coconut cookies, also called coconetes , are very popular in the Dominican Republic. You can enter any grocery store anywhere in the country and you will almost certainly find them.
I call them "rustic" cookies because they have a slightly rough texture, and a little dry. This does not mean they are not delicious, after all, anything with coconut is.
The coconetes are perfect for serving with a cup of freshly brewed coffee or one of our delicious tropical drinks. I advise you to always serve them with something to drink, unless you are an expert in the Heimlich maneuver.

Some know these cookies as cakes . Another not very attractive name for which it is known is "añugaperros". If I already know, it's a strange name.

Recipe Coconetes (Coconut Rustic Biscuits): Rich coconut cookies, very easy to prepare and that go very well with the afternoon coffee.
Serves : 18 coconetes (approx)
Ingredients
- Butter to spread the baking sheet
- 1 1/2 cup of all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon of salt
- 1 cup of brown sugar
- 1/3 cup of butter (1/2 bar)
- 2 eggs
- 1 1/4 cup coarse grated coconut
Instructions
- Butter a baking sheet.
- Preheat the oven to 145 ° C [300 ° F].
- Sift flour, cinnamon, baking powder and salt together. Reservation.
- Mix sugar and butter and beat on low speed until the butter acquires a paler shade.
- Add the eggs one by one as you continue to beat. Remove from the blender.
- With a spatula mix the coconut with butter followed by flour.
- Make 2 teaspoon piles on the baking sheet.
- Bake until golden (check at 15 minutes).
- Cool to room temperature before serving.
