Pork Chops with Green Mango Sauce
I bet that each cook has his Waterloo: Those dishes that occasionally bring bitter defeat. For some it is the pastry shop, for me it is the meat.
I have never been a great meat eater, although in my time I ate some questionable meat. Meat is meat, after all. I can cook seafood and fish asleep and blindfolded. Seafood and fish are dishes that have no difficulty for me.
I can not say the same for the pork chops. At least until now. These pork chops with green mango sauce were a hit.
Unfortunately, my husband is an enthusiastic carnivore, the only one under our roof. My poor half half has been subjected to experiment after experiment, some successful, others disastrous.
And I never got the chops to stay consistently perfect. Like most other cooks I discovered that chops have the tendency to become dry if they cook the wrong way. At last I have come up with the trick: high cooking, but fast.
One hour in marinade helped give it more flavor.
And as I love the mangoes, I figured I had to find a way to combine them with this dish. He was right, the mango sauce was the perfect combination.

Ingredients
- 1 cup of mango juice without sugar
- 1/4 cup of rice vinegar
- 1 teaspoon freshly ground pepper (or more to taste), divided
- 2 1/2 teaspoons sea salt , divided
- 12 thin cut pork chops without bone
- 3 tablespoons of olive oil
- 2 large red onions , cut into cubes
- 2 large green mangoes , peeled and cut into cubes (see notes)
- 3 tablespoons of frying oil (corn, peanut or soy), divided
- 1/4 cup of chopped cilantro
- 1/2 tablespoon dried ground chili , (or more to taste) [optional]
