Ground Stuffing
We use this Ground Beef Stuffing in a great variety of dishes: from Empanaditas and Cakes to Cakes in Leaves. It is also perfect for stuffing picaderas, pastelones, pasta, etc. I use it so much that I decided to simplify my life and add a separate recipe for when I need it in the future.
It can also be served as meat at dinner or lunch, and do many other things, you just have to be creative.
And while we're on the subject of the recipe, let me apologize once again for not posting as often as we were used to. I know that I already sound like a broken record (look for that on the internet if you are very young), or as if you were excusing my procrastination. It is not the case. Not at all

There was another good reason, last month I was in We All Grow, a conference for Latino bloggers in California, where I taught a culinary photography class with Ale de Piloncillo and Vanilla . Almost as important was meeting old friends (like Layla, one of my favorite cooking blogs ), and meet some friends who had never met outside the Internet, like Veronica , and Vanessa , also culinary bloggers.
And I made a small video of the trip as well.

And back to the recipe ...
It is a simple and versatile recipe, I have combined it with potatoes, which you can use to fill Empanadas , combined with raisins you can use it in Kipes , and combined with Fried Fries in what you like the most. Without these optional ingredients you can serve with pasta, to fill lasagna, and to fill in Cakes in Leaves .

Ground Beef Stuffing - Choose your favorite of 4 options to fill Empanadas, Pastelitos, and Pastelones with this rich filling.
Ingredients
- 2 tablespoons olive oil [20g]
- 1 red onion (medium size, minced [65 g])
- 3 teeth minced garlic [20g]
- 1 lb res ground [454g]
- 1 cup tomato sauce [115g]
- 1 pepper (chopped [76g])
- 1 1/2 teaspoon salt or more, to taste
- 1/2 teaspoon pepper or more, to taste
- 1 chopped cilantro sprig
Additional options (choose one)
- 1/3 cup raisins [35g]
- 1/2 cup fried, ripe (cut into cubes)
- 1/2 cup potato (boiled, cut into cubes)
Instructions
- Heat the oil over medium-low heat. Add the onion and cook, stirring until translucent. Add the garlic and cook stirring for a minute.
- Add the ground meat and cook, stirring, press to break up the lumps and cook until golden brown.
Loading... - Pour the tomato sauce and add pepper, salt and pepper. Remove and cover. Cook for 3 minutes.
- Uncover and mix with the optional ingredient you chose. Taste and season with salt and pepper to taste if you find it necessary. Remove from heat.
